Because there was going to be cake, there, of course, had to be ice cream. Even better if it’s homemade. So we called in the experts.
Curt and Nancy know how it’s done. Today, they asked Clara to provide the recipe. Clara keeps the recipe in her head. After 87 years, she probably has a lot of recipes in her head, but none so important as this one.
First you take five eggs and whisk them.
Nancy pours in a quart of half & half.
Three cups sugar.
Four tablespoons vanilla.
That gets poured into the ice cream freezer.
Then add whole milk to the fill line.

Adding alternating layers of ice and rock salt.
When the churning gets difficult, Larry comes out to hold the freezer.
Dave came outside to spin the crank, and he did a few turns, but the ice cream was done.

I LOVE homemade ice cream. My dad used to make it a lot, but then the egg scare came along. I think I still have the recipe–it starts with “beat 3 large eggs or 5 small one” and it’s made with skim milk and Dream Whip. Is Dream Whip even around anymore? It was even better if you put in fresh strawberries or peaches or black raspberries!
Ours is a half a cup of sugar for every egg. At least 6 eggs I think. Half and half and whipping cream a couple “glugs” of vanilla,(about three tbsp) and fill to line with milk.
Yummy! The cake is beautiful. I love the colors. We have been going to get our ice cream freezer out and see if it still works. Looks like it is time to do that.

Egg scare? What egg scare – was that when we were living on the farm? I remember our Grandma and Grandpa Schlesener making ice cream, and then our Dad made it, also. It was the absolute best ice cream in the world.
Remember the MINT ice cream our Mother made?

well, by “egg scare” it was because we used raw eggs and now you’re supposed to use cooked eggs–and no, not when we were living on the farm–it’s only been a few years ago –or maybe 20-25 years! YES, I loved that MINT ice cream. I think it involved cooking/boiling mint leaves and making a syrup to add to the ice cream.
The ice cream recipe I remember:
Beat 4-6 eggs (4 large/6 small/5 med.
add 1 1/2 c. sugar, 1 T vanilla, 1/2 t. salt, 2 c. milk and 3 pkgs Dream Whip. beat well; put in freezer and fill up with more milk. (fabulous!!)
