Swiss chard, beets and cabbage make a colorful palette at the Emporia Farmers Market this morning.
Do you want to be the most popular vendor at the farmers market? Plant asparagus. When I took this photo before the bell rang, there were more people in line than Bob Karr’s few bundles of asparagus.
I think Bob was telling someone he might have a bigger asparagus crop next year because I heard him say, “Football coaches and farmers – they’re always saying ‘wait till next year’ aren’t they?”
A “put on the back porch” sized basil plant was for sale along with other herbs.
Bok choy, I think.
One vendor had gorgeous floral arrangements.
These two kiddos were volunteering as veggie valets today and offered to help me heft my load of greens to the car.

I brought home Swiss chard, spinach, baby romaine, and two kinds of kale, although I have yet to master kale preparation. (I did, however, get several recipes from blog readers/facebook friends – for kale chips and for kale-sausage soup.)
Those vegetables are seriously beautiful! I just need to be able to get up early enough to go on Saturday mornings!

I have heard that colcannon is a good way to use kale as well!
