Roasted Pork Tenderloin

Since I haven’t posted any food photos for a long time, y’all are probably thinking I’m/we’re starving over here. Not the case. It’s hard to maneuver around the kitchen having only one usable leg (the other just hangs on for dear life – along for the ride.)
Sometimes Dave cooks, like tonight, he made this delicious roasted pork tenderloin with orange and red (onion) salsa, something he’s made before. Excellent. And pretty. The pork was incredibly tender.
Since it’s hard to fend for myself, Dave has been finding good TV dinners so I can have an easy lunch. They’re a lot better than they were the last time I had TV dinners – which was probably 7-8 years ago. Today I had an Amy’s Kitchen Indian meal and there have been good ones from Healthy Choice and Kashi.
